SWEET POTATOES FLAUTAS

VEGAN MEXICAN DISH

INGREDIENTS:
 1 Onion
 2 Peeled Sweet Potatoes
 Water to Cover
 Olive Oil
Corn tortillas
1 avocado
Pico de gallo: 2 roma tomatoes, chopped onions, chopped jalapeños, chopped cilantro, lime and salt
PROCEDURE:
Simmer sweet potatoes until tender. Do not overcook. Drain water and mash in pot. Spread mash sweet potatoes on pan to cool.
Fine dice half an onion, sauté with olive oil, then reduce heat to caramelize. Remove from heat and cover

Combine mash sweet potatoes with caramelized onions.

Taste for salt.
Once cooled use mixture to fill corn tortillas.
Fry flautas on a skillet with an spoonful of olive oil.
When crispy, sweet potato flautas are ready
Garnish with prepared guacamole and pico de gallo
